Miami summers don’t ask permission. By nine in the morning, the heat is already there — thick, familiar, unavoidable. And yet the ventanita line doesn’t shorten. The cafetera still goes on. The ritual doesn’t stop just because the temperature climbed past 90.

It just adapts.

Iced café con leche is what happens when Cuban coffee culture meets a South Florida summer and refuses to compromise. Not a watered-down iced latte. Not cold brew poured over milk. A real café con leche — bold, sweet, properly brewed — served cold, the way it’s been done in Miami kitchens for generations.

What Makes It Cuban

A regular iced latte starts with a shot of espresso. Cuban café con leche starts with a colada — a full moka pot brewed strong, finished with espumita, the thick golden foam that forms when you whip the first drops of coffee with sugar until pale and creamy.

That espumita is what separates a café con leche from everything else on the menu. It sweetens the coffee without dissolving into it. It creates a texture — smooth, slightly aerated — that sits on your palate differently than sugar stirred in at the end.

Over ice, that strength matters even more. Dilution is real. A weak espresso disappears into cold milk — you end up with something beige and forgettable. Cuban café con leche, made with the right coffee, holds up.

What You’ll Need

  • Café Real Premium Ground Coffee — roasted dark for the cafetera, with the body to survive ice and milk
  • Your cafetera (moka pot) — any size works; just brew a full pot
  • 2–3 teaspoons of white sugar — for the espumita
  • Cold whole milk — the fat content keeps the drink from tasting thin over ice
  • Ice

Sweetened condensed milk works beautifully in place of both the sugar and the milk — richer, creamier, and more traditional for those who grew up with it. If you go this route, skip the sugar in step two.

How to Make It

Step 1 — Brew a full cafetera

Fill your moka pot with cold water to just below the valve. Pack the filter basket with Café Real Ground Espresso — firm but not tamped. Screw the top on and place over medium heat. Don’t reduce the amount of coffee you use. Over ice, you need the full strength.

Step 2 — Make the espumita

Add 2–3 teaspoons of sugar to a small cup. The moment the first drops come through — dark, concentrated, before the full brew hits — pour them directly onto the sugar. Whip immediately and vigorously with a spoon until the mixture turns pale gold and thick, about 60 to 90 seconds. Set aside.

Step 3 — Combine and cool

Once the full pot has brewed, fold the espumita back into the hot coffee and stir until fully dissolved. Let it cool for a few minutes — or brew it the night before and refrigerate. It keeps well for 24 hours.

Step 4 — Build the glass

Fill a tall glass with ice. Pour cold whole milk to about two-thirds full. Slowly pour the sweetened espresso over the milk so it settles through.

Step 5 — Stir and drink

One slow stir to bring the coffee through the milk. Drink immediately.

A Few Notes

  • Brew ahead. Make a full cafetera in the morning, combine with the espumita, and refrigerate. Iced café con leche on demand for the rest of the day.
  • Whole milk only. Skim milk over ice turns flat. The fat is doing real work here.
  • Condensed milk changes the game. Skip the sugar and regular milk entirely — pour condensed milk over the ice, add the espresso. Richer, sweeter, completely traditional.
  • Don’t rush the cool-down. Pouring hot espresso directly over ice melts it fast and waters down the drink. A few minutes makes a difference.
  • The espumita takes practice. The ratio of those first drops to sugar matters. Keep at it — once you have it, you’ll never skip it.
